    We welcome John Hart OAM as our celebrated guest for the FoodLogic Facebook Live session.  John is the Executive Chair of Australian Chamber – Tourism, Executive Director of Business Group Australia, and on the Board of Tourism Australia, the Australian Business Register, the Angus Knight Group and Food #Standards Australia and New Zealand. John also sits on a range of Committees and Working Groups that set the direction for tourism and #hospitality in Australia, including the Labour & Skills Working Group (Chair), the Tourism Access Working Group, the Tourism Visa Advisory Group and the National Passenger Facilitation Committee.  This session will deliver an insight into an extraordinary career and inspirational leader.

    Chef Gerry Maher shares his love of Australian Produce with this beautiful cauliflower dish.

    We love hanging out with Gerry, he is gracious, respectful and sincere. Gerry is also a master of utilising product to maximise his food costs and eliminate food wastage. Gerry Executive Chef, Australian Turf Club - Rosehill Gardens serves thousands of meals over a year across many venues within his operation which makes the challenge all the more exciting by creating dishes which utilise every ounce of the product. In the dish Gerry has created for this video he champions cauliflower and how you can use the leaves, stem and the curd. This dish is packed full of layered flavours with the addition of macadamia tahini and an orange infused labneh. It is amazing how you can take the humble cauliflower and create a dish which will deliver great results for your menu, costs and guests.

    Tweed Heads Food Bowl

    Our surprise guests for the Friday live Facebook session are {insert drum roll} ❣️Brad Whittaker, Executive Chef, Tweed Heads bowls Club & ❣️Amy Colli Gastronomic Goddess from Destination Tweed. Brad is a passionate chef, having been in his position as Executive Chef at the club for the past 26 years, and he says there has never been a dull moment. Amy is an advocate for local food and agritourism in the Northern Rivers. She is dedicated to supporting farmers, producers and chefs in elevating awareness of local food products and connectivity across industry and to consumers. She has organised and facilitated industry networking events, local food festivals, chefs tours and regional engagement projects. Brad and Amy are going to take us on a culinary journey of the Tweed food bowl.
